I LOVE cooking in my slow cooker! It is such a simple way to have a delicious, home-cooked and fool-proof meal! I am constantly experimenting with new slow cooker recipes like this one… Slow Cooker Chicken and Mushrooms in White Wine Broth. Mmm!!!
This was something I threw together last night for dinner, and my family really liked it. I used frozen, boneless, skinless chicken thighs for this recipe, but it would surely work with bone-in and/or fresh chicken thighs as well. Chicken breasts would be great, as well, but they may take a little longer to cook all the way through, depending on their size and thickness. I love my slow cooker because it comes equipped with a temperature probe that will alert you when your food has reached a safe temperature for consumption. It’s pretty awesome!!!
If you don’t drink wine or don’t want to spend the money on a large bottle when you only need a small amount, I actually found these really great cooking wines that come in multiple flavors! I used the white wine flavor for this recipe.
Something that makes this recipe EVEN EASIER is my shortcut for garlic and onions. In my post, “7 Tips To Save You Time and Money When Cooking,” I outline how I preserve my onions and garlic in large quantities by freezing them in ice cube trays with olive oil. It is ABSOLUTELY my favorite kitchen hack to date!!!
If you don’t use that hack, you can either chop fresh garlic and onions or just add garlic powder and onion powder to taste. I also use McCormick Garlic and Herb seasoning in this recipe. Now, I do buy generic products often in order to save money, but I have to say that NOTHING beats the taste of McCormick Spices!!! That is one of the few places that I do NOT like to skimp!
This recipe really can’t be any simpler! Just dump everything in a slow cooker and walk away! Four hours later… a delicious and savory home-cooked meal will be ready for you to devour!
I like to serve this chicken with risotto or white rice. You could serve it over noodles if you prefer. Or, to make things even easier, you could chop some potatoes and throw them into the slow cooker with the chicken instead! This flavor profile will work with pretty much any starch you want to add to it.

A delicious, healthy and EASY meal for any night of the week!
- 8 chicken thighs (I use boneless, skinless, but bone in is fine, too)
- 8 oz. mushrooms (sliced, chopped or whole- however you prefer them)
- 1/4 cup white cooking wine
- 1/2 medium onion (or 4 cubes of onion if you use my ice cube tray method of freezing them- see post above for a link to instructions)
- 1 & 1/2 Tbsp. minced garlic (or 3 cubes of garlic if you use my ice cube tray method of freezing them- see post above for a link to instructions)
- 1 Tbsp. garlic and herb seasoning, salt-free (I use McCormick)
- 1 tsp. salt
- 1/8 tsp. black pepper

Mince garlic (if not using frozen garlic cubes- see above.)

Chop onion (if not using frozen onion cubes- see above.)

Add all ingredients to the slow cooker (chicken on the bottom) and cook on high for 4 hours or until chicken is cooked all the way through.

Add salt and pepper to taste after plating.

Serve over rice, risotto or egg noodles.

If desired, the broth may be turned into gravy by transferring it into a skillet and whisking it into a mixture of equal parts melted butter (or margarine) and flour (gluten-free or regular) until it comes to a gentle boil.
