This dinner is a family favorite in our house! You can also find a gluten-, soy- and dairy-free version here!
I made this for dinner tonight, and the kids were raving about how much they loved it! My 2 older children actually ate 3 servings each!!!
In the recipe below, I listed measurements for the ingredients. However, if you’re the type of cook who just likes to eyeball things (like yours truly!) this is a great recipe for doing just that! Just cook your noodles and throw in equal amounts of butter and olive oil, some salt, lemon zest, lemon juice, and a little garlic.
If you want a strong garlic flavor, use raw garlic. For a more mild or sweeter garlic flavor, saute it in some olive oil before adding it to the noodles. If you don’t want to mess with the knife and cutting board, check out my instructions on how to make garlic cubes (Tip #3) so that you always have some on hand ready to go. Otherwise, you can just add some garlic powder or granulated garlic in place of the fresh stuff, but in a smaller quantity.
Once all of your ingredients have been thoroughly combined, sprinkle in some parsley and freshly grated parmesan cheese.
This is a quick and easy weeknight dinner that is packed with flavor! For a heartier meal, you can pair it with almost any protein. It works well with fish, chicken, steak, shrimp and many other flavor combinations.

- 1 lb. pasta
- 2 Tbsp. olive oil
- 2 Tbsp. butter
- 1/2 Tbsp. garlic (minced)
- zest of 1 lemon
- juice of 1/2 lemon
- 1/2 tsp. salt
- 1/2 Tbsp. parsley

Cook pasta according to package directions.

Combine all ingredients and mix with the cooked pasta over low heat.

Sprinkle a dusting of freshly grated parmesan cheese over the pasta, and enjoy!!!
*If the raw garlic is too strong for you, saute it in olive oil over medium low heat for a couple of minutes to mellow out the flavor.
