Brown Sugar Bacon Wrapped Chicken

Are you looking for something a little different for an easy weeknight meal?  Tired of eating the same old things?  Well, here is an easy way to doctor up your typical chicken dinner!

Cut some chicken breasts into strips.  You can usually get about 3 or 4 strips from each chicken breast, depending on their size.

Next, season the chicken GENEROUSLY with salt, pepper, garlic powder, and onion powder.  I did not include measurements for any of the seasonings in this recipe because it really doesn’t require much precision.  Just sprinkle the seasonings on both sides of the chicken after you cut it into strips.

After seasoning, wrap one piece of thinly sliced bacon around each strip of chicken in a spiral pattern.  Then, place it on a baking sheet lined with a silicone mat.  If you don’t have a silicon mat, I highly recommend that you get one!  The food cooks a lot more evenly, and the bottom doesn’t burn or brown too fast like it does with a foil lined baking sheet.  You could also try using parchment paper, or just be willing to spend some time scrubbing pans at the end of the night if you don’t line them with anything!

After getting your chicken strips onto the pan, sprinkle some brown sugar over the tops of them, and finish with a little onion salt.  Again, no exact measurements are necessary for this step.  You can add as little or as much as you want.

Lastly, insert a meat thermometer into the thickest part of the thickest chicken strip.  I LOVE this meat thermometer!!!

I baked my chicken at 375 degrees, and it took about 25 minutes to cook through.  You could bake it at 400 degrees if you want it a little crispier or are in more of a hurry.  Just be sure to cook the chicken all the way through before eating!

 

My kids are VERY picky eaters, and it’s not often that all three of them (and my husband) agree on a meal.  This, however, is something that EVERYONE in our household likes!!!  I mean, really… how could you go wrong by wrapping anything in bacon and brown sugar, right?!!!  Hmm… that may actually be a good way to get some vegetables into my reluctant family!  Sounds like a blog post for a future time!  🙂

Ingredients
  • chicken breasts
  • thinly sliced bacon
  • salt
  • black pepper
  • onion powder
  • garlic powder
  • onion salt
  • brown sugar
Instructions
  1. Cut chicken breasts into strips about 1"- 1.5" wide.

  2. Generously salt and pepper both sides of the chicken, as well as adding garlic powder and onion powder to both sides.

  3. Wrap one piece of bacon around each strip of chicken in a spiral pattern.

  4. Sprinkle the top of the bacon wrapped chicken with brown sugar and onion salt.

  5. Bake at 375 degrees for about 25 minutes, or until chicken is cooked all the way through.  USE A MEAT THERMOMETER!

  6. ENJOY!

Recipe Notes

*There are no specific measurements for this recipe.  You can sprinkle the seasonings on a heavily or as lightly as you desire.
