This grilled chicken spinach salad with fruit is a wonderfully refreshing and delightfully easy meal to throw together on a hot summer day, without having to turn on the stove!
Of course, you CAN grill your own chicken for this if you prefer, but when it comes to throwing together a quick salad, I am just as likely to grab a bag of pre-cooked diced chicken breast from the grocery store. Just be sure to defrost it first, if it comes frozen.
This is one of those recipes where you can literally add any type of fruit or dried fruit you want! I usually make this a little bit differently every time, since I just use whatever fruits and veggies I happen to have on hand.
Judging by the title of this post, you probably already guessed that this recipe starts with spinach and grilled chicken.
Next, I added some fresh strawberries and blueberries.
Lastly, I added some canned mandarin oranges (drained).
The end result after mixing and tossing this all around looks like this:
As I mentioned earlier, I have made this salad many different ways, depending on what ingredients I have laying around.
I’ve used any combination of fresh apples, grapes, cucumber, garlic roasted broccoli, dried cranberries, raisins, avocado, almonds, walnuts, raspberries and blackberries, as well.
If you can’t get to the store to buy fresh fruit, this would also be delicious with canned mangoes, peaches and/or pears.
My kids love fruit, and adding fruit to this salad gets them to eat it. (Even the spinach!!!) Their favorite dressing to top it with is raspberry vinegrette.
Use this recipe as a guide, but not a rule. Experiment with the flavors and fruits that you love, and let your creativity run wild!
