Do you have trouble getting your family to eat leftovers? I sure do! It is incredible that they can literally DEVOUR a meal and tell me how delicious is it one day, but try to get them to eat any of the leftovers later that week, and they just turn their noses up at it.
This dilemma led me to start “disguising” the leftovers by creating something new with the same ingredients. And thus, a new segment of my blog is born… “Leftovers Remix”! Allow me to officially welcome you to the first installment!
In this edition of Leftovers Remix, we are going to create a delicious beef and cheddar pasta using scraps from this past week’s meals!
This week, I had some leftover meatloaf and also some cheddar cheese cubes that were leftover from our “make your own cobb salad” bar. So here’s what I did:
I cooked half a box of rotini and placed it in a greased ceramic dish.
Then, I crumbled up the meatloaf and added it to the noodles.
Lastly, I placed the cheddar cheese cubes on top and mixed it all together.
All you need to do is heat it up in the oven until the cheese melts, and that’s it! I heated it at 375 degrees for 25 minutes, and it was perfect!
There you have it! A delicious, fast and easy meal that your family will enjoy without even realizing that they’re eating leftovers! (I speak from experience! My family ate it tonight, and they were none the wiser! The kids even had multiple servings and thanked me profusely for making such a delicious meal! 😊)
Not only does this save time, but it also saves money and creates less food waste. Talk about a win, win, win!
